Chestnut Stuffing

Ingredients

  • Breadcrumbs (from half a loaf, or decent sized breadbuns, and put through a food processor).
  • 1 tin of Chestnut Puree (or 1lb of Fresh ones, de-shelled)
  • Half an Onion (Chopped, Diced, Fried)
  • 2 Hens Eggs
  • Sage (Fresh or Dried) - Optional
  • Splash of Olive Oil

Method

  1. Wash your Hands
  2. Put the Chestnuts / Chestnut puree into a bowl
  3. Tip the breadcrumbs into the bowl
  4. Squish the breadcrumbs + Chestnuts together with your hands.
  5. Add the onions + the Eggs (Yokes & Whites), and squish them in as well (the Onions may still be a bit warm to put it mildly)
  6. Add the optional Sage + Olive Oil if you want, and squish them in.
  7. Put the mixture into a well greased roasting tin, and cover with tin foil ready to cook.
  8. Give it about 25 - 40mins in the Oven @ 450F (just keep an eye on it).
